Loaded Red Potato Casserole Salad



A creamy and flavorful potato salad inspired by loaded red potato casserole, featuring tender red potatoes, bacon, cheese, and a tangy dressing.

Ingredients:

  • 4 cups red potatoes, diced
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup cooked and crumbled bacon
  • 1/4 cup sliced black olives
  • Salt and pepper to taste

Instructions:

Boil the diced red potatoes in a large pot of salted water until tender, about 10-12 minutes

Drain and let them cool to room temperature

In a mixing bowl, combine the sour cream and mayonnaise to make the dressing

In a large salad bowl, add the cooled red potatoes, shredded cheddar cheese, chopped green onions, crumbled bacon, and sliced black olives

Pour the dressing over the potato mixture and toss until everything is well coated

Season with salt and pepper to taste

Refrigerate the salad for at least 1 hour before serving to allow the flavors to meld together

Serve the Loaded Red Potato Casserole Salad chilled, garnished with extra green onions and bacon bits if desired
