Crispy Garlic Butter Fingerling Potatoes



These Fingerling Potatoes with Garlic and Butter are a tasty vegetarian side dish that goes well with any meal. Garlic-infused butter and crispy fingerling potatoes make a dish that is both tasty and filling that everyone will love.

Ingredients:

  • 1 lb fingerling potatoes, halved lengthwise
  • 3 tablespoons butter, melted
  • 4 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped parsley optional, for garnish

Instructions:

Preheat oven to 400F 200C

In a bowl, mix melted butter, minced garlic, salt, and black pepper

Add halved fingerling potatoes to the bowl and toss until evenly coated with the butter mixture

Spread the potatoes in a single layer on a baking sheet lined with parchment paper

Bake in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy, flipping halfway through

Garnish with chopped parsley before serving, if desired
